The Engine off/on switch on the handlebars of my FL250 seems to have 3 positions but only 2 wires. This is my first Odyssey and it wasn't running or even fully assembled when I got it. So I'm just wondering why this switch, which seems to only be a 2 wire off/on switch would have 3 positions instead of 2.

2 of the positions will be "off" and one position is "on" Most ATV's are set up this way. usually(if not always), the center position is on and the outer positions are off.
