After looking at the pictures you posted of the engines, the gaskets have not been heated and the original factory coating is still in place. No need to purchase a new gasket if the
Engine has never been operational. If you do decide to split the gasket and use just one thin section of the whole set, the you should coat both sides of the gasket with the Permatex.
If memory serves me right, the difference with compression between the original head and the recall head was 15 psi (153 v/s 138 psi). Using only one of the three gasket pieces might get you close to the need for using race gas but I doubt it. Compression is only going to raise a little less than 10 psi. You should check to see what the squish band is before you do a final re-assembly.

The base gasket are a must change out. They had a bead of sealant which ran round the sealing are of the gasket. Once that seal is broken, the gasket is done. You definitely want to use the gasket sealant on the lower Speed Chaser gasket..... nice product by the way Speed.
